Pear Salad
Servings: 4
Ingredients
  • 1 5oz. package pre-washed baby arugula
  • 2 Bosc or D'Anjou pears chopped
  • 1 3.5 oz. package crumbled goat cheese
  • 1/2 cup pecan halves toasted
  • 1/3 cup tart dried cherries
  • 1/4 cup fresh squeezed lemon juice
  • 1 tbsp honey
  • 1 tbsp Dijon mustard
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground pepper
  • 1/2 cup extra-virgin olive oil
Instructions
  1. Place the first four ingredients in a large bowl.

  2. To make the vinaigrette, place the lemon juice, honey, Dijon mustard, salt and pepper in a small bowl or glass measuring cup and whisk together.

  3. Add the olive oil and whisk until emulsified.

  4. Pour the vinaigrette over the salad and toss well.
