Oatmeal Pecan Pancakes

Ingredients
  • 1 1/2 cups quick-cooking oats
  • 2/3 cup all purpose flour
  • 2 Tbsp brown sugar
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 2 cups buttermilk
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 2/3 cup chopped pecans toasted
Instructions
  1. In a large bowl, combine the oats, flour, brown sugar, baking soda, baking powder, salt, and cinnamon. Whisk in the eggs, buttermilk, and vanilla and mix well.

  2. Fold in the toasted pecans.
  3. Spray a griddle or skillet with cooking spray and cook over medium heat. Cook pancakes until bubbles appear on the top layer, about 5 minutes. Flip and cook until evenly browned, about 3 more minutes.

  4. Serve with butter and maple syrup.
