Because the weather has been so hot, I decided to throw an Asian themed dinner party I called Dim Sum On The Deck where I mainly served Chinese take-out appetizers and beer. It’s a fun party to host because you can spend most of your energy on party decorating and leave the cooking to your favorite local Chinese take-out place, in my case, Red Bowl Restaurant. However, because I can’t seem to help myself, I decided to make a Chinese Noodle Salad With Spicy Peanut Sauce as well. This dish is loaded with flavor and quick and easy to prepare as it is made with grocery store rotisserie chicken. It is also a time saver because since it can be served at room temperature, you can make it ahead. Whether or not you choose to throw a dim sum party, I would encourage you to give this recipe a try.
Chinese Noodle Salad With Spicy Peanut Sauce
Ingredients
- 1 cup water
- 1/2 cup peanut butter
- 3 Tbsps soy sauce
- 3 Tbsps rice vinegar
- 1 Tbsp brown sugar
- 1 tsp fresh ginger grated
- 2 garlic cloves minced
- 1/4 tsp red pepper flakes add more or less depending on how spicy you like it
- 1 lb. Chinese egg noodles or angel hair pasta
- 1 1/2 cups rotisserie chicken shredded
- 1/2 cup English cucumber cut into matchsticks
- 2 scallions diced
- 1/4 cup peanuts chopped
- 2 Tbsps cilantro chopped
Instructions

Put the first 8 ingredients in a blender until smooth. Cook the pasta and toss with the sauce, chicken, cucumber, scallions, and chopped peanuts. Garnish with extra peanuts and cilantro.
Serve hot or at room temperature.
Recipe Notes
You can add other vegetables such as red pepper, bok choy, or water chestnuts for extra crunch.
